Phood Phun with Phlip... Pan-Seared Salmon and Tropical Hollandaise

Scene two of Mimi’s trifecta last weekend…                 We wanted some good breakfast, but by the time breakfast rolled around we weren’t hungry, so we made it and basically ate it for lunch.  This is a take on some things we have done before, with the eggs and hollandaise, and with the salmon as well (though I usually bake it). Enough with the lining, let’s get to business here. 1.5lb salmon fillet, or two nice-sized ones.      Consistency. I find what works and I stick with it until it doesn’t work anymore.  I eat this for breakfast most weekdays and I have for several months.  It is a high protein, easy to carry food that doesn’t cost a ton of money to make. And they're dead simple to make! First you will need: 5 eggs Meat(s) of your choosing...  We used some diced chicken breast and turkey smoked sausage. 1/2 cup of shredded cheese Cream cheese is amazing in these too Onions and peppers, diced (or spinach, kale, mushrooms, zucchini, radishes, tomatoes/salsa...  be creative, switch it up!)      Spray a mini loaf tin with nonstick spray and put in your non-egg items: Add half the cheese on top of that, then pour in the scrambled eggs, then top with the rest of the cheese: Place into a waiting 350 degree oven, and bake until the eggs are good and set: Cut your loaves into even portions, sectioned out into how many ever breakfasts you intend to consume that week:

Two cooks in the kitchen turns what COULD be two posts into one. Over the past 12 months now, we have effectively eliminated most simple carbs from our diet and have enjoyed the benefit of eating well and still managing to lose weight.  Turns out that "low carb" is in no way the same as "no carb."  Set a goal and manage your diet to fit within that number and all will be amazing.  Somewhere in the process, we learned that we have been frying chicken DEAD wrong for most of our lives. Today, we’re here to share the technique with both of you. Sunday morning, we created fried chicken sliders for breakfast with chicken strips, a bread of almond flour and cheese, and of course cheesy scrambled eggs. 1.15lb boneless/skinless chicken 1tbsp seasoning blend (onion/garlic powders, paprika, and lemon pepper, plus salt to taste) 1tsp corn starch 1tbsp flour Off camera, 1-3 days before...  Cut the chicken into strips and marinate it in your sea
