this recipe came from a straight-up “damn, I miss […]” place.
Substituting vegetable items in the place of starches like rice and
potatoes is all cool and all until you make something very nearly DEMANDING
that item.
Enter: riced
cauliflower. You can make it yourself
with a fresh cauliflower and a coarse grater or you can buy it at your local
grocer frozen for a premium on convenience.
If you have an Aldi where you live, which pretty much most of us do
these days, BUY IT THERE for half the price of the big stores. No, it is not rice, but it fills the spot
like we needed it to.
Enough of the
introductions, let’s get down to fooding.
For this otherwise pretty easy dish, you will need:

1 cup each, onion/pepper mix and mushrooms (it's under there, trust me)
1 bag riced cauliflower
1 bag, frozen spinach
1 small package of boneless skinless chicken, diced and cooked
1 bag, cheese of your choosing
OH, and...
Sauté the onion/pepper mix and mushrooms first, salt/pepper to taste:
Once no liquid remains, mix in the cauliflower and spinach,
continuing with sautéing until, again, all the liquid is cooked out.
Now add the heavy cream and heat until the sauce begins to thicken.
Now it is EVERYBODY in the pool.
Heat until cheese is melting.
Remove
from heat and spray your casserole dish before pouring the mixture in:
Sprinkle some more cheese on top, then bake until anything liquidy
has been absorbed into the contents of your casserole:
Now Mimi can come and sprinkle a little more on top before showing it
off to all of our friends:
For something that
came from the simplest of places and is more or less a simple assemblage of ingredients,
this was EXCEEDINGLY good. I started it
and Mimi finished it while I administered bathtime and such. We happened upon each other while both going
back for seconds. Suffice it to say,
this will go into the normal rotation.
